their strength, docility, hardiness and intelligence making them invaluable aids to the farmer. Before us, however, is an interesting conjunction of the ancient and the modern, for the cars, though drawn by the slow, patient oxen, run upon tracks that are decidedly modern in appearance and construction and that greatly lessen the effort required of pulling. Guided by ropes attached to their sensitive nostrils the oxen haul these cords of sugar-cane to the mill. Products and Industries - At the mill large rollers will crush out the sweet juices which will be boiled down and evaporated and the syrup that remains will crystallize into brown sugar. Other processes will further refine and re-crystallize the first crude product, making the familiar lump, granulated and powdered sugar used all over the world. The refuse cane will be used as fuel. In the early days the syrup was cast into loaf-shaped moulds, having openings in their bottoms for the un-crystallized part, or 'molasses' as it is called to drip through into jars placed below, and this 'loaf' sugar was broken into 'lumps' for daily use. People and Homes - Negroes form a large element of Cuba's population. Slavery was abolished in 1880, but much of the manual labor is still performed by these workers who are generally able, willing and fairly intelligent. The social privileges of the colored people are greater in Cuba than in the States."
